3 pounds chicken breasts, cut into medium pieces
1/2 cup soy sauce
1/4 cup sprite
1/2 tablespoon lemon juice
3/4 cup distilled white vinegar
3 bulb garlic, peeled and crushed
1 medium onion,chopped long thin pieces
1 medium ginger root thinly sliced
5 bay leaves
1 tablespoon black peppercorns
1/2 tablespoon powder food seasoning
ADD-ON'S:
2 pieces medium sizes potatoes chopped into cubes (same size as chicken)
4 pieces boiled eggs (remove egg shell)
Directions
1. Boil eggs, remove egg shell, and set aside.
2. Combine the chicken, soy sauce, vinegar,lemon juice,sprite,canola oil,chopped potatoes,onions garlic, ginger, bay leaves and peppercorns in a skillet or pan. Bring to a boil over medium heat. Once it boils, reduce heat to a simmer.
3. Add the boiled eggs. Cover the pan and simmer for 30 minutes, basting the chicken occasionally. After 30 minutes, remove lid and cook until liquid has reduced to half.
4.Remove chicken from the pot to a serving plate. Serve chicken hot over steamed rice.
